APPLE CARAMEL CHEESECAKE:  Cheesecake filled with spiced apples and caramel, graham cracker crust.  Garnished with whipped cream more apples, caramel and chopped roasted pecan pieces.

APRICOT SWIRL CHEESECAKE:  Rich creamy cheesecake with apricot filling swirled in, baked in a
graham cracker crust (or almond cookie crumb crust if you wish, please specify) Garnished with whipped cream & fruit.

BAILEY CHEESECAKE:  A creamy cheesecake made with Irish cream, in your choice of chocolate cookie
or graham cracker crust.  If not specified I use chocolate cookie crust.   Garnished with whipped cream and drizzled chocolate.

BAILEY’S & WHITE CHOCOLATE CHEESECAKE Creamy cheesecake made with Irish cream and loaded with white chocolate chunks in a graham cracker crust.  Garnished with whipped cream & white chocolate curls.

BANANA CREAM CHEESECAKE:  Your choice of Peanut butter cookie, chocolate cookie or graham cracker crust, filled with creamy rich banana cheesecake, made with fresh ripe bananas.  Topped with real whipped cream, P-B crust chopped peanuts & sweet banana chips; chocolate cookie crust shaved chocolate & sweet banana chips; graham cracker crust sweet banana chips only.

BLACKBERRY CHEESECAKE: Blackberries and Blackberry brandy make the perfect filling for this cheesecake all inside of a graham cracker and Walnut crust.  Garnished with whipped cream and **fresh blackberries-when in season**.

BLACK FOREST CHEESECAKE: Chocolate cookie crust, filled with creamy chocolate cheesecake, swirled with cherries and topped with a sour cream glaze, whipped cream & long stem cherries.

BLUEBERRY SWIRL CHEESECAKE:  Rich creamy cheesecake with blueberry filling swirled in baked in a graham cracker crust.   Garnished with whipped cream.

MASCARPONE CHEESECAKE:  A much lighter, almost fluffy cheesecake made with mascarpone cheese (Italian soft cheese)  & sour cream glaze.  Made with a graham cracker crust.

MINT CHOCOLATE CHIP CHEESECAKE:  Mint cheesecake made with crème de menthe liquor, loaded
with mini chocolate chips all inside a chocolate cookie crust. Garnished with whipped cream and more mini chocolate chips.

NEW YORK STYLE CHEESECAKE:  Smooth rich and creamy vanilla cheesecake.  Traditional made in a graham cracker crust, but you could specify a different crust. Garnished with fresh whipped cream & fruit topping.

ORANGE CREAM CHEESECAKE:  Baked with chunks of mandarin orange and orange zest in the cheesecake with a graham cracker crust.  Garnished with fresh whipped cream & orange slices.

PEACHES & CREAM CHEESECAKE:  New York style creamy cheesecake with peaches swirled in baked
in a graham cracker crust. Garnished with whipped cream.

PEANUT BUTTER CHEESECAKE:  Chocolate cookie crust, filled with rich, creamy peter pan peanut butter cheesecake Garnished with peanut butter cups and swirls of whipped cream.

PINA COLADA CHEESECAKE:  Graham cracker crust filled with a creamy pineapple-coconut cream cheesecake. Garnished with whipped cream and fresh pineapple wedges *when in season*, long stem cherries and sprinkled with coconut.

PISTACHIO CHEESECAKE:  Creamy pistachio cheesecake in a toasted almond shortbread cookie crust.
Sprinkled with chopped pistachios & toasted almond slices.

PUMPKIN CHEESECAKE: Smooth rich and creamy cheesecake with pumpkin and spices in a graham cracker or gingersnap crust.  Sure to please your guest. Garnished with fresh whipped cream topping  & nutmeg OR Sweet cream glaze OR Caramel and Pecans.

RASPBERRY CHEESECAKE: Creamy New York style cheesecake with raspberries swirled right in baked
in a graham cracker crust. Garnished with fresh whipped cream, raspberry glaze & fresh berries when in season.

RUM-RAISIN CHEESECAKE:  New York style cheesecake make with raisins that have been soaked in Myers’s Dark Rum.  Then more Myers’s Dark Rum is added to the mix.  Then it’s topped with a walnut
praline glaze and sprinkled with a few more raisins.  All inside a graham cracker crust, unless you specify something else.

S'MORES CHEESECAKE:  Graham cracker crust, filled with a creamy chocolate cheesecake.  Topped with a
layer of chocolate ganache then mini marshmallows and marshmallow fluff, all toasted golden brown and more

SNICKER CHEESECAKE:  Rich creamy cheesecake in a chocolate cookie crust, loaded with chopped snickers candy bars.  Go for the gusto, chose the whipped cream & more snickers topping!   Garnished

STRAWBERRY SWIRL CHEESECAKE: Rich, creamy cheesecake with strawberry filling swirled in, bake

fresh strawberries **when in season** or more strawberry topping **off-season** and whipped cream.

apples and brown sugar.  Then flipped upside down (like pineapple upside-down cake).

BANANA WALNUT TORTE: Layers of banana-walnut cake, made with ripe bananas and fresh walnuts, separated by layers of vanilla whipped cream.  Iced with more vanilla whipped cream.  Garnished with more fresh ground walnuts, and dried sweet banana slices.

BLACK FOREST TORTE: Layers of chocolate torte and cherries.  Covered in your choice of  buttercream icing or whipped cream icing.  Topped with swirls of icing a long stem cherry then more cherry filling on top and sides is garnished with chocolate crumbs.

CARROT CAKE A traditional spicy carrot cake with walnuts, raisins, and fresh ground carrots, filled with cream cheese icing.  Topped with more cream cheese icing.  Garnished  with ground walnuts and frosting carrots.  Please specify 2 or 3 layer cake.

CHAMBORD & CUSTARD CAKE:  Two layers of cake made with chambord and raspberry filling swirled in just before baking.  Custard filling, icing with vanilla whipped cream.  Top garnished with shaved white chocolate and *fresh raspberries* (fresh when available, thin layer of raspberry filling, topped with shaved chocolate when not).

CHOCOLATE MOUSSE CAKE: Chocolate cookie crumb crust filled with a creamy  chocolate mousse, topped with whipped cream swirls & chocolate antlers.

CHOCOLATE PECAN TRUFFLE TORTE:  A pecan-coconut crust, with a creamy chocolate truffle filling.  Topped with fresh whipped mocha cream and more ground pecans.  Garnished with whole pecans and drizzled with chocolate.

CHOCOLATE RASPBERRY WALNUT TORTE:  Layers of chocolate-walnut torte, with raspberry filling or raspberry mousse filling.  Your choice of icing, either whipped cream, chocolate whipped cream or buttercream, be sure to specify. Garnished with ground walnuts, and chocolate decorations & **fresh raspberries when in season**.

COCONUT LAYER CAKE: Layers of a rich, moist coconut cake, with a hint of lemon and an Optional thin coat of raspberry preserve OR lemon curd filling OR coconut buttercream, PLEASE Specify.  Iced with coconut buttercream icing.  If lemon/raspberry filling is chosen-it’s topped with just a little more. Garnish
with more coconut, this can be toasted if you like.

CRANBERRY UPSIDE DOWN CAKE: *Seasonal Treat* is a wonderful, home style cake, made with almond paste for a delicate flavor, and cranberries that have been coated with a hint of real maple syrup, for a wonder red jewel topped cake.  Garnished with vanilla whipped cream and toasted almonds.

CREAMSICLE CAKE: Thin layers of orange cake, washed with an apricot glaze  and layered with vanilla whipped cream.  Topped with more whipped cream, garnished with hazelnuts  & mandarin oranges, then drizzled with white chocolate.

CREME DE MENTHE TORTE:  Layers of chocolate torte, separated by creme de menthe whipped cream. Covered with crème de menthe buttercream and garnished with chocolate ganache glaze and Andes Mints.

EGGNOG BUNDT CAKE: *Seasonal Treat*.  This home style bundt cake is made with the finest eggnog.  Covered with an eggnog glaze.  Very simple but rich, moist and delicious.

FRESH STRAWBERRY & WHITE CHOCOLATE MOUSSE CAKE: White chocolate & toasted almond
crunch crust, covered with whole strawberries.  Then filled to the top with white chocolate mousse. 
Garnished with swirl of whipped cream & white chocolate lattice. **This can be made year round with imported strawberries (with imported berries, the price might be more, depending on market cost), but it’s best during our strawberry season**.

FRUIT CAKE: SERIOUSLY GOOD FRUIT CAKE! REALLY, It’s Great! Not that dry-candied-fruit stuff from
the supermarket.  Rich-Moist cake packed with dried raisins, apples, apricots, dates, plums, cherries, cranberries, blueberries, Roasted walnuts, cinnamon and brandy & rum flavors.

GERMAN CHOCOLATE CAKE: Layers of traditional German chocolate cake, combined with layers of traditional coconut-pecan filling.  Topped with more coconut-pecan filling.  Sides are iced with chocolate frosting.  (Tall 3 layers of cake & filling.)

IRISH CREAM TORTE:  Layers of white cake, drizzled with espresso chocolate ganache.  Filled and iced with Irish Cream flavored whipped cream.  Decorated with chocolate drizzles.

KAHLUA WHITE RUSSIAN CAKE:  Thin layers of white cake, washed with a hint of apricot  preserve,
covered with Kahlua-white Russian whipped cream.  Garnished with milk & white chocolate & chocolate covered espresso beans.

LEMON MOUSSE CAKE:  Graham cracker crust filled with a tangy lemon mousse.  Topped with a PUCKER UP LEMON CURD, then swirls of whipped cream, lemon slices or white chocolate decorations.

PEACHES AND CREAM: Layers of French vanilla cake filled with peaches, almonds and whipped cream.  Covered with whipped cream.  Top garnished with peaches and side with toasted sliced almonds.

PEANUT BUTTER CAKE:  Layers of chocolate cake and creamy peanut butter frosting.  Covered in a rich chocolate ganache, and garnished with mini peanut butter cups.

PEANUT BUTTER MOUSSE CAKE: Chocolate cookie crust covered with a chocolate glaze.  Filled with  peanut butter mousse and topped with whipped cream and peanut butter antlers.

PEAR UPSIDE DOWN SKILLET CAKE:  This old fashion cake is baked in a cast iron skillet (11”) with
tender ripe pears and brown sugar glaze with a moist vanilla flavor cake, then flipped out to reveal the beautifully glazed pears.  Best if warmed and served with vanilla ice cream, yummy.

PINA COLADA CAKE:  Angel food cake filled with pineapple cream filling.  Topped with whipped cream.  Garnished with coconut, pineapple slices and cherries.

PINEAPPLE UPSIDE-DOWN CAKE: Traditional yellow cake, baked with brown sugar, pineapple slices and cherries.  Then flipped upside-down for an old fashion treat.

PUMPKIN CHIFFON MOUSSE: Light, creamy pumpkin chiffon mousse with a hint of Kentucky bourbon on
a gingersnap crust.  Garnished with whipped cream a sprinkling of nutmeg and crystallized ginger.

PUMPKIN ROULADE: Rolled pumpkin sponge cake.  Filled with a cinnamon - Amaretto flavored cream cheese filling.  Garnished with powdered sugar, cream cheese swirls and  almonds.

RASPBERRY ALMOND TORTE: Thin layers of French Vanilla cake with raspberry and almond cream
filling.  Iced with vanilla whipped cream.  Sides garnished with toasted  almonds, top covered with more raspberry filling, and fresh raspberries when in season.

ROCKY ROAD FUDGE BROWNIE CAKE:  Two layers of chocolate fudge brownie cake with walnuts.  Topped with mini marshmallows, walnuts and drizzled with a rich chocolate frosting.

ROULADE-The many flavors of roulade: Mix and match any flavor, vanilla or chocolate sponge cake with many filling.  Try my famous sour lemon roulade, or apricot with Chantilly cream, raspberry filling, strawberry filling, mocha whipped cream.  Chocolate with white chocolate mousse or perhaps raspberry mousse filling.  You pick the flavors; I’ll create the masterpiece.

RUM CAKE “cassata casalinga”:  Classic cassata casalinga “Italian home style rum cake”.  Sponge cake soaked with rum-amaretto syrup, filled with a spice-ricotta-cream-rum filling, sprinkled with pistachio nuts
and shaved semi-sweet chocolate.  Iced with whipped cream and garnished with more pistachio nuts,
candied citron “fruit” and just a little more shaved semi-sweet chocolate.

STRAWBERRY TORTE: Thin layers of chocolate cake, layered with strawberries.  Topped with vanilla buttercream icing and more strawberries.  Garnished with drizzles of chocolate and chocolate dipped strawberries (when in season.) *(can be made with vanilla cake OR chocolate icing)*.

TIRAMISU CAKE:  From an old world Italian cookbook, layers of lady finger sponge cake, soaked in espresso.  Layered with a mascarpone-sabayon-brandy-marsala cream filling. Iced with Kahlua whipped cream and sprinkled with grated semi-sweet chocolate & cocoa powder.  Then topped with a chocolate covered espresso bean.

TRIPLE CITRUS CAKE: One layer each of lemon, lime, orange cake, separated by vanilla whipped cream
and iced with more vanilla whipped cream.  Garnished with shredded coconut on the sides and topped with lemon, lime and orange zest.

TRIPLE LAYER MOCHA ALMOND TORTE:  Layers of chocolate almond torte and mocha whipped cream.  Sides garnished with toasted almond slices.  Top garnished with mocha cream swirls and chocolate  lattice decorations.

TURTLE BROWNIE CAKE: Two layers of rich fudge brownie covered with chocolate chips, chocolate ganache, drizzled caramel and pecan.

TUXEDO MOUSSE CAKE: Starts with a chocolate cookie crust, a layer of chocolate  fudge cake, brushed with Frangelico liquor.  Covered with white chocolate mousse then mocha chocolate  mousse.  Dusted with cocoa powder, sprinkled with ground hazelnuts.  Garnished with swirls of whipped cream and chocolate bow decorations.

VANILLA CANNOLI CAKE: Three layers of white cake (with or without) mini chocolate chips, separated by vanilla cannoli cream (ricotta-cream filling).  Topped with vanilla whipped cream icing.  Garnished with your choice of nuts, shaved white chocolate or mini chocolate chips. PLEASE SPECIFY GARNISH.

WHITE CHOCOLATE FOREST CAKE: Layers of white cake, spread with cherry preserves, and white chocolate mousse.  Iced with vanilla whipped cream. Garnished with shaved white chocolate and long stem cherries.

WHITE CHOCOLATE & RASPBERRY BASH:  It starts with a fudge brownie bottom, covered with raspberry preserve.  Covered in a generous layer of white chocolate mousse.  Garnished with raspberry puree, whipped cream swirls and shaved white chocolate.

Frozen desserts are 10” and serve approximately 12-16
**These cakes must remain frozen, can be taken out of freezer approximately 15-20 minutes before serving**

PEACHES & CREAM ICE CREAM CAKE: Two layers of white cake covered with a spicy peach preserve, separated by a by a layer of premium peach ice cream.  Covered with vanilla whipped cream and  garnished with shaved white chocolate & toasted almonds.

HOME MADE ICE CREAM BY THE QUART: This is approximately 8 servings (or 16 scoops) This ice cream is all natural, freezes much harder and is much denser than commercial ice cream.   It will only keep in your freezer 1-2 weeks before you start to loose quality and ice crystal begin to form. Vanilla, Chocolate, Chocolate swirl, Rum-Currant- (made with Myers’s Dark Rum), Pumpkin (really great with brown sugar bourbon sauce or praline & roasted pecan sauce).  Peanut Butter Pandemonium (vanilla with swirled chunky peanut butter-chocolate fudge-and mini peanut butter cups)

BANANA CREAM & PEANUT BUTTER TART: Peanut butter cookie crumb crust, filled with vanilla custard made with the best dark Jamaican rum that’s covering sliced banana quarters.  Garnished with whipped cream, dried banana slices and sprinkled with peanut pieces.

BERRY STRUDEL OR LATTICE CRUST TART:  Your choice of Blueberry, Raspberry or Cherry in a pastry crust with a lattice top or walnut-strudel topping.

BLACK BOTTOM RASPBERRY TART:  Graham cracker and almond nut crust.  Filled with a chocolate raspberry liquor bottom, then topped with raspberry mousse.  Garnished with whipped cream, toasted almonds and *fresh raspberries (when in season). *

CAPPUCCINO MOUSSE TART:  Smooth cappuccino mousse in a chocolate cookie tart crust.  Garnished with fresh whipped cream and a sprinkle of cinnamon.

CARAMEL-CRANBERRY NUT TART: A wonderfully rich tart features a buttery-sweet shortbread crust and
an incredible caramel filling studded with toasted almond & pecans, dried cranberries and bittersweet chocolate chips. A NICE SUGGESTIONS WOULD BE A SCOOP OF VANILLA ICE CREAM SERVED
